Winemaking
Weather conditions leading up to the 2021 harvest were typical of a Hawke’s Bay summer – warm sunny days with moderately cool nights. As autumn arrived the season became cooler yet remained dry, providing ideal ripening conditions. Molly’s Block is a cooler, later ripening site that allows the grapes to develop maximum aroma and flavour while preserving natural acidity. Winemaking was strongly focused on enhancing the aromatics and delivering the delicacy and finesse crucial to premium Rosé. The grapes were rapidly and gently pressed with only the “free-run” juice used to produce an elegant wine low in phenolics (tannins). The juice was cold settled for clarification, fermented at cool temperatures in stainless steel to maximise the retention of fruit character and bottled early to capture its youthfulness and vitality.
The Wine
A bright, salmon pink colour. Attractive aromas of fresh raspberries, strawberries, and watermelon lead to beautifully weighted, refined, and harmonious palate defined by intense red fruit flavours and a long, refreshingly dry, salivating finish. Molly’s Block is best enjoyed while young but will continue to drink well over the next two to three years. Eminently enjoyable on its own or partnered with salmon, poultry, or lighter red meat dishes.
